Karma Sweet potato Peanut soup

INGREDIENTS

Ingredients for 6 servings

2 onions
1 garlic clove
2 sweet potatoes
2 carrots
500ml vegetable stock
400ml coconut milk
400g strained tomatoes
4 tsp Karma organic peanut butter
1/2 tsp ground chilli
1/2 tsp paprika powder
coriander
Handful of peanuts

PREPARATION

Finely dice the onions and sauté in a pan with the garlic.
Peel and dice the sweet potatoes and carrots, then add to the pan and pour over the vegetable stock, coconut milk and tomato purée.
Cook over a medium heat until the sweet potatoes are cooked through. This will take about 15 minutes.
Garnish with coriander and peanuts. A deliciously warming dish!
